Cilantro-Salsa Steaks
makes 4 servings

4 small rib eye steaks, 1 inch thick
1 cup salsa
1/4 cup fresh lime juice
3 tablespoons vegetable oil
1/2 cup chopped cilantro
1 teaspoon cumin
3 cloves garlic, crushed
red pepper flakes, to taste

1. Place steaks ina shallow dish in a single layer. Do not overlap.

2. In a mixing bowl, combine remaining ingredients and pour over steaks. Cover and marinate in refrigerator overnight.

3. Remove steaks from marinade (discard) and grill to desired doneness over hot coals.
